Applications/Uses

Preservation: It acts as a preservative and has an antimicrobial effect that inhibits the growth of harmful bacteria, such as Clostridium botulinum, the causative agent of botulism.

Curing Agent: It is a traditional ingredient in the salting and curing of meat and sausage products, often used in conjunction with common salt.

Color Fixative: It helps maintain the meat's appealing red or pink color by reacting with the protein myoglobin.

Flavor: It contributes to the characteristic flavor of cured meats.

Dental Desensitizer: It is a common active ingredient in over-the-counter desensitizing toothpastes and mouthwashes designed to treat tooth sensitivity (dental hypersensitivity). It works by blocking nerve signals in exposed dentin, reducing the pain response to stimuli like heat, cold, or sweets.

Preservative and pH Regulator: It is used as an excipient (inactive ingredient) as a preservative and pH regulator in the manufacturing process of certain pharmaceutical products.

Other Medicinal Uses: Historically, it has been used as a diuretic and for managing high blood pressure, and as an ingredient in some cough syrups and treatments for urinary tract infections. It can also be used to cauterize small wounds or remove warts.
